Stir-fried Shredded Eggplant with Minced Beef

Prepare ingredients.

Wash the eggplant and cut into shreds, remove the pedicle seeds of the green and red peppers, wash and cut into shreds, and shred the ginger and garlic.

Add salt, starch, and a little soy sauce to the ground beef and mix well. Pour 2 teaspoons of oil in a hot pan, add the mixed minced meat to loosen, set aside.

Pour 1 teaspoon of oil in the pan, saute the ginger and garlic, add the shredded eggplant and stir fry.

When the shredded eggplant is soft, add soy sauce, salt and pepper and stir fry. Pour in the fried minced meat, green and red peppers and stir-fry evenly.

Tips:
1. Beef should not be eaten often, it is advisable to eat once a week.
2. The muscle fiber of beef is rough and difficult to digest, and it has high cholesterol and fat. Therefore, the elderly, young children and people with weak digestion should not eat more.
