Summer Quick Soup---white Melon and Salted Egg Soup

Ingredients: half white melon root, two salted duck eggs, sliced ginger, and a bowl of pork bone soup. The soup ingredients are for three people

Wash the white melon and cut it in half, dig out the flesh seeds, and cut into slices

Beat the salted duck eggs into a bowl

Add a bowl of water to the pork bone soup, add ginger slices, and bring to a boil

After the soup is opened, add melon slices

After the soup is boiled again, pick out the two salted duck egg yolks from the bowl and add them to the soup and cook for 5 minutes

Finally, slowly pour the remaining salted egg white into the soup. While pouring, use chopsticks to scatter the egg liquid to make it form an egg flower. Turn off the heat and put it in a bowl for tasting.
Tips:
Remarks: Because the salted egg has a salty taste, no additional salt is needed for this soup. If there is no pork bone soup at home, you can add some chicken powder to taste.
