Sweet and Sour Fish

Clean the mirror fish and use a kitchen paper towel to soak up the water;

Cut a few cuts on both sides of the fish body; my cut is too shallow, it is recommended to cut a bit deeper, as long as it is not cut;

Coat the mirror fish with starch, then shake off the excess starch;
4.
Pour an appropriate amount of corn oil in a non-stick pan to heat; add mirror fish and fry on medium heat until golden on both sides;
5.
After the mirror fish is shaped, turn the mirror fish over and continue frying;
6.
When the color of the mirror fish is the same as the picture, turn off the heat;

Take out the mirror fish and use kitchen paper towels to absorb the excess oil;

Leave the bottom oil in a non-stick pan, add tomato sauce, Thai sweet chili sauce, and white sugar to stir fry evenly;

When the sauce is bubbling, pour a small bowl of water to boil, then add an appropriate amount of salt, and stir evenly;
10.
Add the fried mirror fish and cook for a while;

When the soup is boiled until it is thick, collect the juice, turn off the heat, and serve.
Tips:
1. The seasoning can be adjusted according to personal taste;
2. Be sure to use a non-stick pan.
