Sweet and Sour Fish Sticks

Wash the pangasius with a kitchen paper towel to absorb the moisture and cut into strips. Add a little salt to marinate for about ten minutes.

Dice the onion.

Add flour and dry starch to the egg white and stir to form a thick paste. Add a few drops of vegetable oil and mix well for later use.

Put the fish sticks in the egg white batter and mix well, and coat the egg white batter evenly.

Fry in a 50% hot oil pan over medium heat until slightly yellow, remove and drain the oil for later use.

Pour a little oil in another pot, add onions and saute until fragrant.

Add the tomato sauce and stir fry for a while.

Add 1 small cup of water, sugar, a pinch of salt, and white vinegar to a boil.

Pour water and starch to thicken, turn off the heat and set aside.

While cooking the sauce, heat the oil in the fryer again to 80% hot, add the fish sticks and re-fry until the surface is golden and crispy.

Bring the cooked sauce to a boil again.
12.
Pour in the fried fish sticks and stir fry quickly evenly.
13.
Take out the pan and serve. Sprinkle with cooked peanuts.

Tips:
Fish can be replaced by any fish with few or no thorns.
