Sweet Sophora Flower Cake

Wash fresh Sophora japonica with water several times to control the moisture.

Add half a teaspoon of salt and mix well.

Beat in the eggs and mix well.

Pour the flour.

Stir it into a batter.

Heat the pan, apply a thin layer of oil, and put it in the oiled mold.

Use a spoon to dig a small amount of batter into the mold and smooth it. It can also be fried directly without using a mold.

Small fire throughout. After the batter is set, remove the mold, turn it over and fry the other side. Fry the yolk on both sides, and the omelette should be slightly bulged.
Tips:
1. The mold should be greased, otherwise it will stick.
2. Slightly coat the pan with a layer of oil, and the fried Sophora japonica will be refreshing and not greasy.
