The Golden Partner of Chinese Dim Sum---red Bean Paste
1.
Wash the red beans and soak them in hot water for more than 6 hours. It is better to pinch the bean skins.
2.
Add enough water to the pot and boil until rotten.
3.
Pour the boiled red beans into a sieve, squeeze it with a spoon to filter out the bean paste.
4.
Add the right amount of brown sugar, keep stirring, and continue to cook.
5.
Until the red bean paste absorbs sugar and becomes sticky.
6.
After the bean paste has cooled slightly, add some sweet-scented osmanthus, maltose, pork suet, and mix well.
