Three cups of chicken began in Jiangxi and became famous in Taiwan. The whole process of cooking three cups of chicken is without water. Although the oil, wine, and soy sauce are all one cup here, the three are not 1:1:1. The amount of seasoned rice wine for three cups of chicken is twice that of soy sauce, and the amount of soy sauce is twice that of sugar.
For this three-cup chicken, I used a combination of wine and rice wine. And added a few pieces of potatoes and lotus root.

Three Cups Chicken

1. Wash the chicken drumsticks

2. Chop the chicken legs

3. Add cold water to the pot, add an appropriate amount of rice wine, and add chicken nuggets

4. After boiling, remove the scum, remove the chicken nuggets, drain the water and set aside

5. Heat the pan with cold oil, add garlic cloves, and stir-fry for golden brown

6. Add green onion, ginger, red pepper and sauté until fragrant

8. Cook rice wine, add soy sauce

9. Stir fry evenly

10. Add sugar and wine

11. Put in potato pieces and lotus root pieces

12. Simmer for 15 minutes

Tips:

1. You can also use oyster sauce instead of soy sauce.
2. Add a few pieces of potatoes and lotus root to match, which is your favorite.
