Bone the chicken pipa legs and cut them into large pieces. Grab them with rice wine, salt, starch, and sesame oil, and then marinate for ten minutes. The chicken thigh itself is tenderer than the meat of other places, plus the pretreatment process, the tenderness is added to the tenderness, and it will not become fishy after cooking.
3.
Peel the pumpkin, remove the seeds, and cut into large pieces. Change the onion and cut into small pieces with a knife. Remove the stems and cut the mushrooms into large pieces for later use. Don’t cut shiitake mushrooms too small, they will shrink after high-temperature cooking
4.
Heat the pan with oil, and stir-fry the shallots on a low heat to create a fragrant flavor. I like to fry it until it is slightly browned, so that the aroma of the onion is fully integrated into the oil, and the stewed rice is particularly fragrant
5.
Next, add the marinated chicken thighs and continue to stir fry until the color changes. Use a spatula to stir fry continuously to prevent the pan
6.
Then add shiitake mushrooms and pumpkin in turn, continue to stir-fry for three to five minutes, then add soy sauce and salt, stir well and turn off the heat
7.
Wash the rice and put it in a rice cooker. The amount of water is less than when we braise white rice, because the pumpkin will leak water.
8.
Then pour the fried chicken drumsticks, mushrooms and pumpkin into the rice cooker, stir a little to make the salt taste even
9.
Press the cooking program to cook the rice

Braised rice is to stir-fry the aroma of vegetables and add them to the rice, and then cook them together. Vegetables can be any vegetable you like, but you cannot choose vegetables with too much moisture, otherwise the stewed rice will be stained.
