Tiramisu

Prepare materials.

Only the yolk part is used for egg separation.

Pour water and caster sugar into the pot and heat it over a medium-to-low heat.

The egg yolk is beaten with an electric whisk until it becomes white and the volume is swollen (I use a manual whisk, but I only beat it until it is thick).

Boil the sugar water to a boil for an additional 2 to 3 minutes.

At first, the sugar water should be slowly added to the egg yolk paste to continue to beat, while adding the sugar water to beat.

Let cool for later use.

Do not pour the water in the cheese.

Mix the cheese and stir until smooth and without particles.

Pour the egg yolk paste into the cheese.

Use scissors to cut small pieces of gelatine and soak in ice water to soften it (the water for gelatine should be boiled, not tap water).

Pour the cheese batter until the mold is full, put it in the refrigerator, and wait until the cheese batter is set.

Put a layer of cocoa powder on the sieve, and use a hair dryer to blow the edge of the mold with hot air during demolding, or cover the edge of the mold with a hot towel to easily demold.
