I have not been very cold with tiramisu. The reason is that I have been blinded by the various irregular tiramisu sold outside. I followed a serious prescription to make it myself, and I was exclaimed: It turns out that Tiramisu can be so delicious! It melts in your mouth like ice cream!

(I have carefully studied Junzhi's method and Kurokawa Yuko's method. The general direction follows Kurokawa, and the small details are also affected by Junzhi~ The following method is the version of my actual operation, not the original version of Kurokawa)

Ingredients

Tiramisu in A Cup

1. Soak instant coffee powder with hot water, cool it slightly, add 1 teaspoon of rum, set aside

2. Two egg yolks + 20g white granulated sugar, put them on hot water, separate them from water, and beat them until they are thick and creamy and lighter in color

3. After cooling slightly, add mascarpone cheese to 2 and mix well

4. Fresh cream (take out from the refrigerator when you need it, measure 80ml, because it needs low temperature) + 1 teaspoon of rum, beat it to 60%

5. Add the product of 3 to 4

6. Beat 1 egg white with fish-eye foam + 10g white sugar, and beat until hard foaming; add 5 li in two times and mix well. The cheese paste is complete

7. First scoop a small amount of cheese paste on the bottom of the cup, hold the cup and shake it on the table a few times; break the finger biscuits, dip them in coffee wine, spread on the cheese paste to fill a layer; then continue to put cheese paste, put finger biscuits , Put the cheese paste, it's almost to the cup~ 4 hours on ice, sprinkle cocoa powder, start eating~

Tips:

1. Finger biscuits are too absorbent. Be careful when dipping coffee wine. You can also use a brush to brush the surface of finger biscuits with coffee wine.
2. As for sprinkling cocoa powder when eating, or sprinkling cocoa powder before putting it in the refrigerator, it doesn't seem to matter~ I sprinkled it when I finished taking pictures and ate a cup immediately, and another cup was sprinkled with cocoa powder. Keep putting it in the refrigerator and eat it again. When I found that cocoa powder and cheese fit very well~
