Tofu Brain

200 grams of dried soybeans are soaked in water for 8-10 hours (soak in the refrigerator in summer)

Wash the soaked soybeans with clean water, add 1000 grams of water, and grind them into a thick soy milk with a juice machine (or use an ordinary cooking machine), and filter the ground soy milk for later use

The soy milk is boiled thoroughly on the heat, do not heat up the whole process, to prevent the pot from overflowing

The boiled soy milk skimmed the floating powder and turned off the heat

Put the lactone into the container, add a little water and mix thoroughly. The temperature of the soy milk drops to 80-90 degrees (you can see the tofu skin on the surface), flush into the container for the lactone, and stir for 2 turns

After standing for 15 minutes, the tofu brain is finished, and serve with light soy sauce, shrimp skin, red pepper, sesame oil and seasoning.
