Pork ribs in cold water, blanch the water, chop the corn into pieces, and remove the roots of the beans;

After blanching the water, filter the water, fry the ribs shallowly, remove the filter oil, and leave the oil in the pot;

Cut the potatoes into large pieces and continue to fry them until the skin is golden brown;

In another pan, put 1/4 cup of sweet noodle sauce, 1 tablespoon of Zhuhou sauce, 1/4 cup of light soy sauce, 1/2 tablespoon of sugar, and stir-fry on medium heat until bubbling;

Pour in ribs, potatoes and corn, add water to cover the surface, cover the pot and simmer until about 1/2 of the water is left;

Cut the eggplant into pieces, pour it into the pot, turn it over with a spoon or spatula, and simmer for about 5 minutes;

Pour the beans and stew again;

Stew until the beans are broken, add some salt to taste and serve.
Tips:
1. Pork ribs blanched in water and shallow fried can be fishy, and the meat will not be completely scattered after the stewing for a long time;
2. Deep-fry the potatoes to prevent them from turning into sand after being stewed.
