Twice Cooked Pork with Garlic Sprouts
1.
Prepare ingredients: pork belly, garlic sprouts, Pixian bean paste, millet pepper, green onions, ginger.
2.
After washing the pork belly, let it cool in a pot and cook over medium heat until it is ripe, then remove it and let it cool.
3.
Let the pork belly cool and cut into thin slices, wash the green garlic and cut into sections, cut the green onion into sections, slice the ginger, and cut the millet pepper into circles.
4.
Put the oil in the pot to heat up, add the green onion and ginger slices.
5.
Then add Pixian bean paste and stir-fry over medium-low heat to get the red oil.
6.
Then add pork belly slices and stir fry.
7.
After seeing the pork belly curled out of oil, pour out the oil.
8.
Add millet pepper and continue to stir fry.
9.
Add garlic sprouts, stir fry evenly, and then get out of the pan.
Tips:
1. After the pork belly is cooked, it must be cooled before cutting, otherwise it will be easy to chop;
2. I like to stir-fry the twice-cooked pork, so it will take longer to stir-fry. If you like softer, stir-fry less for a while;
3. The garlic sprouts are easier to cook, so turn off the heat after a little stir fry.
