It's just that the crab body is a bit difficult to open. First lift the crab cover and buttocks up a little bit, and then insert the scissors to cut the connecting part of the crab cover, then the body and the crab cover can be easily separated. Cut the body into pieces, and then go back to handle the crab legs, or along the crab leg joints, first cut each leg into two sections, and then use scissors to cut the crab legs from the middle to make it easier to eat.

This season is better now, and the crabs are quite fat. Then the crab yolk in the crab butt can be dug out and thrown into the crab lid. Then beat a few duck eggs, add some rice wine to remove the fishy, put some salt in the crab lid and stir. Let the egg and crab yolk mix well. Steam the crabs first. Because the crabs are relatively large, they are steamed three times, each steaming for about 10-12 minutes, and then the crabs can be steamed for about 15 minutes before being eaten out of the pot.

Tips:
Crabs have many thorns, so it is best to bring a rubber glove to handle them, so as not to hurt your hands. If you want to make the steamed crab eggs tender, you can add some water to reconcile them. Personally, I like to eat the old ones, so I didn’t add water. They also steamed for a longer time, 20 minutes. In addition, if you need it, you can cut some ginger, add vinegar and sugar to make crab seasoning, but personally think it is unnecessary. If the crab meat itself is fresh, there is no fishy taste, and the meat itself is sweet.
