Ungrilled Eggplant

Remove the stems of 2 eggplants and wash them.

Cut into large slices with a knife, sprinkle with a tablespoon of salt, stir evenly and repeatedly to remove the moisture, and then squeeze the moisture by hand.

To a bowl of juice, a little starch, water, braised soy sauce, sugar, chicken essence, and a tablespoon of oyster sauce.
