Unroasted Winter Melon

Wash and peel the winter melon, and cut into large thick slices;

Cut ginger into thin strips; cut scallions into oblique sections; cut dried red pepper into sections;

Raise the wok, sauté ginger and red peppers, stir-fry slowly until the peppers are dark red;

Add winter melon and stir-fry evenly over high heat;

Add braised soy sauce and stir-fry evenly;

Add proper amount of boiled water and rock sugar, not too much water, it is enough if it is less than half of the winter melon;

Stir-fry evenly, after the high heat boils, turn to low heat, cover the pot and simmer until cooked;

Collect the juice on high heat until the soup is slightly thick, add sesame oil and stir-fry evenly;

Sprinkle chopped green onion and stir fry evenly

Finally add some chicken essence, turn off the heat and stir fry evenly. It is not necessary to add chicken essence, and add some salt to the taste.
