Xinjiang Mutton Soup Rice

First simmer a pot of lamb in clear soup.

Add 200 grams of flour to 1 gram of salt and 95 grams of water to form a dough, then wake up for 15 minutes, then knead again, and continue to wake up for 30 minutes after kneading smoothly.

When you wake up, prepare the vegetables for the soup and rice: onions, potatoes, carrots, tomatoes, cherry tomatoes, eryngii mushrooms, spinach, shallots and coriander.

Dice onions, potatoes, carrots, tomatoes, and pleurotus eryngii; cut spinach, spring onions, and parsley into large sections.

Roll out the awake noodles into large slices, grease both sides, cover with plastic wrap and wake up for another 30 minutes.

Stir the cut fat lamb with low heat to get the oil out.
Then add onions, potatoes, carrots, tomatoes, sauté until softened and season with salt.

Tips:
1. The vegetables used in the soup and rice are free. Xinjiang people like to use onions, potatoes, carrots, tomatoes, spinach, and coriander.
2. If the mutton that you bought is particularly fat, you can take the fat slices off, use them to stir-fry the vegetables in the soup and rice, and cook the rest of the meat and bones in the soup.
3. Clean water can be used if there is no mutton soup.
4. If you can eat chili, just use some, it will be more delicious.
5. If you feel that it is troublesome to pull the dough, you can roll it into large pieces, or use a knife to cut into small pieces.
