Stewed Lamb Brain in Clear Soup

Fresh goat brain, called pale pink

Use a net drain to hold the goat brain, put it in boiling water, blanch the water over a small fire, and remove the foam and impurities. When blanching the water, always use a net drain, don’t throw it into the water, so as not to rot

The blanched goat brain is reserved.

Cooked mutton soup, skim off the oil on it

Put a bowl of clear soup in a wok, season with salt and pepper

Add appropriate amount of goji berries and cook for 2 minutes

Put in the blanched goat brain
8.
Add a little green vegetables and boil it
Tips:
When blanching sheep's brains, be sure to use a net drain.
