Wash large eggplants and wipe dry

Place in the oven at 165 degrees and bake for 15 minutes until the eggplant skin is wrinkled

Prepare the minced garlic and ginger

Add appropriate amount of oyster sauce, light soy sauce, chili oil

Heat an appropriate amount of salad oil and sauté the minced garlic

Stir well and set aside

Add appropriate amount of cooking wine, salt and white pepper to the pork puree, mix well

Tips:
