Amaranth Juice Pink Cold Skin

Wash the amaranth, put it in a saucepan, add about 300 grams of water, and boil for about 5 minutes. Cook until the amaranth becomes soft and the soup turns red, then turn off the heat

Filter the boiled amaranth juice and let cool for later use

Find a larger container, put in the sifted high-gluten flour, pour in the amaranth juice while stirring. Do not add the amaranth juice at one time. Add slowly depending on the consistency of the batter. I used about 280 grams of flour for 200 grams. Amaranth juice

The adjusted batter will fall straight and at a constant speed when it drops down. The speed will not be very fast or particularly slow. This means that the consistency of the batter is just right. Leave it for an hour and a half (the adjusted batter will not be too thick. Good steamed, too thin will not chewy)

Prepare two flat-bottomed stainless steel plates (cold Pi Luo Luo), and brush a thin layer of olive oil on each plate (you can use cooked cooking oil instead)

Spoon a scoop of batter and put it on a stainless steel plate. The amount of batter should cover the entire bottom of the plate.

Cover the lid and steam for about 2-3 minutes. When the surface of the Liangpi bubbling up, it means it has been steamed.

Put the steamed cold belt plates together in the cold water basin, and let the cold skin cool down for a while. It will be better to take off the plate.

Coat each piece of steamed cold skin with olive oil to prevent the cold skin from sticking to each other

Wash cucumbers and cut into shreds, wash coriander and cut into sections
