Authentic Fried Baba Twice Cooked Pork

Ingredients preparation: Kou Daxiang fresh pepper watercress, Erdao meat, eggs, flour, peppercorns, sugar, small mustard seed oil, ginger, green onions, salt, monosodium glutamate and other ingredients.

Cut fresh pork into appropriate size, put it in water and simmer over medium heat, add scallions, old ginger slices, and peppercorns to remove the meaty smell. (If you don’t have green onions, ginger, or pepper, you don’t need to add them)

Prepare an appropriate amount of flour, add eggs, water and make a paste, not too viscous, add salt or sugar to the roux according to personal taste.

Pour the oil in the iron pan to heat it, turn the iron pan to make the hot oil cover the surface of the iron pan, pour in the adjusted batter to make a golden fried baba on both sides. (Similar to spreading pancakes in a wok)

Pour the small mustard seed oil on the iron pan. When the oil temperature gets higher, put the pepper overheated oil. Put the cut two-knife meat into the pan and stir-fry until the meat slices are curled. Then add Kou Daxiang fresh pepper and watercress, and add a small amount of sugar.
