Banana Leaf Rice Cake

After the zong leaves are cleaned, use scissors to cut off the head and tail of the leaves. Pour an appropriate amount of water into the pot, boil it, add the rice dumpling leaves to a blanch, remove it, drain the water and let it cool. I use zong leaves. Banana leaves are only available in the yard of my hometown. You can buy zong leaves.

Pour the glutinous rice flour into a large ceramic bowl or glass bowl. Do not use stainless steel, which tends to turn black.

After the red beans are cleaned, pour them into the pressure cooker, simmer for 20 minutes, then remove and drain the water. It's very soft at this time. This step cannot be omitted, otherwise the beans in the plantain stick will not be cooked.

Pour water into the pot, add white sugar, boil and stir with chopsticks until the white sugar is easy. Pour in glutinous rice flour and stir well.

Take 3 pieces of zong leaves and place them in a row. Use a spoon to put the rice milk on the zong leaves, then fold them left and right, and tie them firmly with a rope. There should be no traces of leaking rice syrup.

The wrapped banana leaf stick is like this, you can use scissors to cut off the extra leaves and rope. Put it in the basket and drain the water.

Put the wrapped banana leaf glutinous rice into the steaming grid, pour in an appropriate amount of water, and steam over the water. The rice cooker I use can be steamed, which is convenient and fast, and saves trouble.

Close the lid and press "Nutrition Steam" for 20 minutes. The steamed banana leaf cake will be simmered for another 5 minutes. There is no need to open the lid immediately, then take it out and let it cool before eating. Soft and waxy, very delicious.
Tips:
1. The banana leaves are very large and need to be cut into small pieces with scissors. If you use zong leaves, you need more than three pieces to be firm and not exposed. 2. Steamed banana leaf rice cake can not be used in high heat, it is easy to leak the stuffing, medium and small fire is fine. 3. If you put beans, you need to cook them in a pressure cooker in advance, because beans are not cooked by steaming for 20 minutes, but glutinous rice flour can be cooked. 4. The white granulated sugar needs to be dissolved in boiling water, and then stir the glutinous rice flour.
