Bitter Gourd Braised Cattail

Prepare 1 bitter gourd and 1 forktail fish, clean the fish and cut into pieces.

Remove the seeds of bitter gourd and cut the word "day".

Put the oil in the pan and saute the ginger and garlic slices, fry the simmering fish over a slow fire, splashing into the cooking wine.

Fry the fish until slightly golden on both sides.

Shovel the fish, leave the oil in the pot, and stir-fry the bitter gourd for a while.

Pour in two cups of boiling water, add 2 small pieces of sugar, and cook for 10 minutes on low heat.

I use black bean sauce, chuhou sauce, and wild sansho.
