Bitter Gourd Dipping Sauce

Take the bitter gourd and wash the skin, cut into quarters, scrape off the flesh in the middle. Note that the white flesh near the skin of the melon is the bitterest, so scrape clean.

Bitter melon slices can be thin or thick, according to personal taste. After cutting, place them neatly on a plate, and add some Haitian bean paste.

1. Use a small brush to wash the crevices of bitter gourd 2. Be sure to remove the bottom layer of white flesh, it is basically not bitter
