Black Sesame Condensed Milk Toast

Mix the flour A, water, and yeast A required for medium-grown flour into a dough, cover it with plastic wrap, and keep it in the refrigerator for more than 14 hours.

Tear the middle seed dough into small pieces, and put the liquid ingredients into the bread bucket.

Cover the flour on the liquid, put salt and sugar on the opposite corners, dig a small hole in the middle of the flour, and put the yeast.

Start the bread machine kneading program for 30 minutes (including kneading 1, standing for 10 minutes, and kneading 2). It is more convenient to use Ali Xiaozhi.

Knead until the gluten is extended and the surface is smooth, add softened butter, and select the kneading program for 20 minutes.

After kneading to pull out the glove film, start the bread machine fermentation program (ferment for 1 hour in winter and half an hour in summer. The room temperature is higher, and it can be directly fermented at room temperature.)

Prove the dough to 2.5 times its size.

After gently kneading the sesame seeds into the dough, divide the dough into three evenly, cover with plastic wrap and relax for 15 minutes. (The process of adding sesame seeds can be put into the bread machine 3 minutes before the end of the kneading process. I just added it in this process because I forgot.)

Roll out the dough into a cylindrical shape, do the same for all 3 dough, cover with plastic wrap and let it stand for about 15 minutes.

Roll it out again into a long strip, roll up the dough, place it with the mouth down, and put the dough into the mold.

Put it in the oven for the second fermentation, and ferment at 38 degrees to 80% full.

Put it into the preheated oven and heat it up and down at 170 degrees for about 35 minutes. (Please refer to the temper of your own oven for time and temperature). If the surface is darker, you can cover it with a piece of tin foil.

Remove the mold immediately after it is out of the oven, and dissipate it on the drying rack. After taking it out, it is best to put it on its side for a while to avoid recession. After cooling to the hand temperature, the bag is filled.

Tips:
1. The liquid part can be adjusted according to the water absorption of the flour. If it is kneading by hand, increase the liquid by about 10 grams and add it in batches.
2. The temperature of the oven is different, please adjust the time and temperature according to your own oven.
