Boiled Cabbage Leaves

Wash the cabbage and separate the cabbage gang from the cabbage leaves. Only cabbage leaves are used in this dish (please refer to Sour and Spicy Cabbage for the help of cabbage).

Tear the cabbage leaves into strips about two fingers wide.

Boil water in a pot, add some oil and salt, and add cabbage leaves.

Blanch until the cabbage leaves become soft, don't over blanch them.

Remove, drain the water, and put it in a dish.

Put some shredded chili peppers.

Drizzle with steamed fish soy sauce.

Heat the pan, put the minced garlic in cold oil, fry the minced garlic until slightly yellow, remove the minced garlic and put it on the cabbage leaves (the minced garlic will become black if it is not removed in advance).

The oil that has been fried in minced garlic is heated until slightly green smoke appears, and it is ready to be poured on the cabbage leaves while it is hot.
