Braised Black Pomfret

1. Ingredients: black pomfret (head, viscera and wash).

2. Sliced ginger, chives.

3. Pour the oil in the pot to heat, add the ginger slices and fry it, remove it.

4. Next, add the black pomfret and fry until both sides are browned.

5. Then, add water, add some cooking wine, soy sauce, salt, sugar, seasoning and continue cooking.

6. Finally, when the soup is thick, add some chicken essence and sprinkle some chives after it is out of the pot.
