Braised Eggplant with Minced Pork

Wash the eggplant and mince the pork.

Cut the eggplant into small cubes and marinate for a while

Mince green onion, ginger, garlic

Minced meat with cooking wine, white sugar, light soy sauce, plant seasoning powder, grab and mix evenly

Heat the oil in the wok, pour the eggplant and stir fry. Stir-fry until the eggplant becomes soft.

Add a little oil to the pot and stir-fry the bean paste to create a fragrance.

Add minced meat and stir fry. Then add green onion, ginger and minced garlic and sauté until fragrant

Add cooking wine and saute until fragrant.

Then pour the eggplant and continue to stir fry, add light soy sauce and white sugar

Continue to stir fry with a pinch of salt. Pour a little sweet potato starch solution to thicken, stir-fry the eggplant evenly, turn off the heat, put it on the plate and sprinkle chopped green onion.
Tips:
Marinating the eggplant with a little salt for a while can prevent the eggplant from turning black and make the eggplant delicious. Fry the eggplant with a little more oil until the eggplant becomes soft, do not add water, and stir-fry slowly over medium and low heat, so that the fried eggplant tastes good.
