Braised Noodles with Beans

Prepare a piece of pork~

Cut the meat into thin strips, add light soy sauce, dark soy sauce, and cooking wine to marinate~

Shred the carrots and break the beans into pieces~

Prepare green onion, ginger, garlic, etc., as shown in the picture~

Add a little more oil to the pot than usual for cooking, (I cut a little fat to fry some lard, because the braised noodles really won't be delicious without the oil)~

The oil is almost out, add green onion, ginger, garlic, star anise, etc., stir fry twice~

Add the shredded pork and stir fry until the color changes~

Then add the beans and stir fry. The beans need to be fried for a while~

Then add the carrots and stir fry a few times~

Add water to the place just before the vegetables, add salt, thirteen incense, the salt should be twice as much as the usual cooking, you can taste the soup, it is a little saltier than the vegetables, so many noodles, right~

Scatter the noodles and spread them evenly on top of the dishes. Then cover the pot and simmer and turn to low heat. For novices, it is not easy to master the heat. Before spreading the noodles, you can put a small bowl of soup out for use, so that the back is not cooked yet, but the soup is gone.

After three or four minutes, open the lid, turn over the noodles with chopsticks, and continue to simmer~

Open it in two or three minutes, then turn over the strips with chopsticks and continue to cover and stew~

After three or four minutes, open it again and turn over the noodles. You can see that the soup has almost been in the noodles, and the noodles are very soft at this time. During this period, if the heat is not well controlled, use a spatula to shovel the bottom of the pot so that it does not stick to the pot. If there is, add a little bit of soup prepared in advance, a little each time. Then continue to simmer~

Open the lid of the pot, stir the noodles and vegetables with chopsticks, then cover and turn off the heat and simmer for a while to get out of the pot~
