Braised Pork Noodles

Put the pig's small intestine in a basin, one end is connected to the water pipe, and the water is small.

The dirt inside flows out by itself. Repeat several times.

Scratch the surface with salt.

Cut the garlic cloves in half and pat the ginger loose.

Add light soy sauce, a little dark soy sauce, add some salt, add garlic cloves and ginger cubes, and add water.

Put the washed small intestine in and bring it to a boil.

Tips:
1. When choosing pig small intestines, squeeze out the paste inside to take a look. The white ones are good ones, and the yellow ones are bitter ones.
2. The white section of intestine is used for digestion, this section of intestines will contain digestive juices, etc., so there is no need to turn the intestines out and wash them when cooking, and the eldest son in the latter section must be turned over and washed.
