Braised Ribs

Put the ribs in the pot, add cold water to a boil, blanch the ribs to wash away any blood foam.

Put it into a bowl and set aside.

Put rock sugar in the frying pan, turn on a small fire and slowly heat it, the rock sugar will melt.

Stir with chopsticks and wait for the rock sugar to melt and foam.

Add the ribs, stir fry, add light soy sauce, stir fry the dark soy sauce evenly.

Add scallions, ginger slices, cinnamon, star anise, garlic cloves.

Add enough hot water, bring to a boil on high heat, and simmer on low heat.

Simmer it over low heat. There are still a few quail eggs at home, which are cooked, peeled and put in a pot.

Cook until the soup is thick and the meat is rotten, season with a little salt, and put in a plate.
