Braised Rice with Bacon

Prepare the ingredients, it is best to use the freshly made bacon (this is my mother's own bacon, smoked with cypress branches), and peas must be used for vegetables

Wuchang rice (sold in the Meitian official account, please follow the official account for details)

Cut the bacon into small dices with a knife, and separate the fat part from the lean part

The rice is brewed half an hour in advance

Add a little oil, add fat diced pork, and stir-fry

Keep the heat on low, stir out the fat of the diced pork, the fat will become golden

Add lean bacon and continue to stir fry

Stir fry until almost cooked

Add diced vegetables

Continue to stir fry for two minutes, turn off the heat and set aside

Pour the soaked rice in the rice cooker

Add the fried bacon and diced vegetables together with the fried oil

Put in slightly less water than usual for cooking, and steam it with a rice cooker as usual

Because bacon has salt, this rice has a slight salt content. The aroma of bacon is incorporated into the rice. The vegetables are clear and not greasy at all. The rice grains absorb the oil and have a more compelling aroma

Tips:
Heart-warming reminder: The key to making this braised rice is to use first-class rice, preferably Wuchang rice, and secondly, to use the freshly made smoked semi-fat and lean bacon.
Because bacon has salt, I didn't add salt. If you eat it hard, you can add a little salt to braise it.
You can also use glutinous rice instead of rice, or use half of glutinous rice, which tastes good. It's up to my liking.
