Braised Sausage with Fungus and Potatoes

Dried pepper, pepper, grass, fruit, star anise, garlic cloves and sliced ginger.

Black fungus and green onion are reserved.

Pour salt, flour and a few drops of sesame oil into the basin containing the large intestine and stir vigorously until the large intestine is clean. Bought a lot but only a photo of a plate of fatty sausage was taken here. Boil water in a pot, add a few slices of ginger, put the large intestine into it and cook. When the water is boiled, the large intestine can be rinsed and dried when the foam is boiled, and then cut into small pieces with a hob.

Heat the pot and pour the sesame oil. You don't need to pour too much oil, because a lot of oil will be produced when the intestines are fried.

When the oil is heated to 60% hot, pour an appropriate amount of red oil in Pixian bean paste and stir fry until the aroma is obtained, and then add pepper, ginger, garlic cloves, and dried red chili in turn until fragrant.

When the spices are all fragrant, pour in the cut sausage, add appropriate amount of salt, chicken essence, star anise and grass fruit, stir fry for a few minutes. The purpose is to stir-fry the fat intestine oil, and the salt can also taste into the fat intestine. Don't worry if it's dry, because it will recover when you add water and stew.

Stir-fry the fatty intestines over high heat for about four to five minutes, then add boiling water.

Pour in potatoes and fungus, add some salt, and bring to a boil.

Bring to a boil, pour into the pressure cooker, cover and simmer on high heat for 15 minutes.
