Braised Winter Melon

Peel the wax gourd and cut into pieces, and draw a cross knife against the side of the skin.

The side of the cross knife is dipped in soy sauce.

Leave the colored side up for more than a few minutes.
4.
Add more oil, skin down, and fry until small bubbles are formed.
5.
Pour out the excess oil. Add soy sauce, dark soy sauce, three or four pieces of rock sugar, simmer for a few minutes until the winter melon softens.
6.
Out of the pot, sprinkle chopped green onion.
