Pea yellow is a kind of Beijing-style palace snack, which is more common in spring and summer. Most of the methods are made by soaking, boiling, breaking, adding sugar, sautéing, condensing, and cutting peas. The traditional method also adds red jujube meat.
My parents like to eat pea yellow. Here in Kaifeng, there are many pea yellows on the streets and alleys, and the price is very cheap. I used to buy them for my parents. The weather is getting colder and less pea yellows are sold. So, I made pea yellows for my parents at home to eat. This time, I added candied dates. "

Ingredients

Candied Pea Yellow

1. Soak the peeled peas for a day.

2. Wash the soaked peas and boil the pot under water (under normal circumstances, the water used to cook peas is twice as much as that of peas).

3. After boiling on high heat, skim off the froth, and cook on low heat until the peas are soft and rotten.

4. Put the peas into the food processor and break them.

5. Put the smashed peas into a wok and add an appropriate amount of sugar.

6. Stir fry until the moisture is almost dried.

7. Cut the candied dates into small pieces in advance.

8. Spread in the container.

9. Pour the fried pea paste into a container covered with candied dates.

10. Cover with greased paper and smooth. After the temperature is lowered, put it in the refrigerator overnight.

11. Prepare the pea yellow and pour it out.

12. Cut into pieces and serve.

Tips:

You can also leave out dates, and pure pea yellow is also very delicious.
