Cat's Claw Snowy Mooncake
1.
Glutinous rice flour + sticky rice flour + orange powder + sugar mix well, melted butter + milk + condensed milk beat well, slowly pour the liquid into the powder, stir evenly with a spoon while pouring, and cover with plastic wrap. Put the pot on high heat and steam for 25 minutes.
2.
There will be a layer of slick oil on the surface of the steamed dough, stir with a spoon to melt the oil into the dough, let it cool for a while, put on disposable gloves, directly knead the dough until the surface is smooth and slightly tough. (Must wear gloves! Don't say I didn't remind you!)
3.
After letting it cool, grab a small piece of dough, mix it with pink pigment or strawberry powder, knead it into a long strip, and cut it into small particles with a scraper. I cut it with a plastic spoon without a scraper on hand.
4.
The pink balls cut from the mold length are put in and squashed. Don't take off the gloves in this step, they are very sticky.
5.
Close up~ Don’t put too much dough, it will spoil the shape
6.
The white snow skin is divided into 23g/piece, and the prepared filling is 18g/piece. Wrap it up. The method of wrapping is to press the filling and slowly push the skin up with the mouth of a tiger until it is closed. This step cannot be done by yourself. Take a picture and get a feel for it
7.
The wrapped ball is very smooth and does not show the filling~ Press it slightly to fit the size of the mold, put it in the mold, and flatten it with your fingers
8.
Take off the gloves, use the stickiness of the fingers and the mooncake skin, first separate the surrounding circle from the mold, and then release the mold. Finished! Take pictures and eat! Or give it away.

Be patient
