Chicken Fried Yam

Cut the green onion, ginger and garlic. Try to use green onions. You can add more garlic.

Cut the chicken into small pieces. My chicken thigh is skinless and fat-free. If you don't, you need to blanch it first.
I have also fried chicken breasts, the meat is not very tasty.

The yam is peeled and cut into hob pieces and soaked in clean water. This water is also useful for a while. The volume of yam is about the same as chicken. In fact, it doesn’t matter if you have more or less. It depends on which one you like. Every time I eat yam, the chicken is left over.

On high fire, heat the pot, pour the oil, add pepper and star anise. The star anise is broken into pieces. A little oil is enough. If you like spicy food, you can add a little dried red pepper to make it more fragrant.

You can pour the chicken nuggets with a slight aroma. Stir fry quickly to prevent sticking to the pan.

There will be a lot of oil and water in the stir-frying, and I will be lazy and dump some. In short, we must stir-fry the oil and water.

This is almost the end, turn off the heat and stir fry more, because it will stick to the pan. Increase the sauce and stir fry evenly.

Add balsamic vinegar. Add green onion, ginger and garlic. Stir fry evenly. Pay attention to the temperature, neither stick to the pan nor cool down, keep the oil squeaking all the time.

The yam was poured in with water and the fire boiled. The water doesn't have to be yam, it's almost fine. You can add a little salt. Because I added a lot of soybean paste just now, I need less salt. I don't add salt, because it tastes mild because I want to eat it for children.

Turn the heat to a simmer. In the meantime, you can cut the green peppers (Dabao doesn't eat spicy, so I put fruit peppers) and coriander.
Put the chopsticks in the yam, it's easy to insert it. It only takes a few minutes. Then heat up the juice, almost turn off the heat, put the green onion leaves, green pepper, and coriander in it and simmer for a while.
Tips:
The vinegar is fragrant and tender to the chicken. When the dish is done, there is no vinegar taste, so don't put too much.
