Chongqing Pepper Chicken

Wash the chicken and cut into pieces.

Bring water to a boil and add 1 tablespoon of white wine. The hard-to-cook joints will be boiled for 8 minutes, and the remaining chicken pieces will be boiled for another 5 minutes (for a big rooster, cook for a few more minutes).

Pick up the chicken half-cooked and set aside.

Mince the green onion, ginger and garlic and set aside.

Stir minced ginger, onion and garlic into the chicken nuggets, add chili oil, sesame oil, pepper noodles, light soy sauce, salt and mix well.

Add sugar, chicken essence, monosodium glutamate, then stir in a spoonful of salad oil and marinate for an hour.
7.
Sprinkle with chopped green onion on the plate.
Tips:
The chicken nuggets should not be cooked for too long, just cooked.
