Clams stewed with eggs is a common dish, but it’s a bit particular to stew well!

Clam Stew

1. The clams were soaked in water for a period of time

2. Clean the shell with a toothbrush

3. Put some ginger in the pot

4. Add some wine and cook until the clams are open. Take out the clams and don’t pour the water.

5. Beaten eggs

6. Add some salt to taste

7. Add some cooking wine and beat evenly

8. Remove the drained clams and put them in a shallow bowl

9. Add warm water for cooking clams to the egg mixture, stir evenly at a ratio of 1:1

10. Strain with a sieve and pour into a clam bowl

11. After the water is boiled, put it in the steamer without covering the lid, wait until the edges of the bowl are white, then close the lid and steam for 7 minutes.

12. Take out the steamed stewed egg

13. Sprinkle with chopped green onions

14. Soy sauce

15. Heat some sesame oil in a small pot and pour it on the chopped green onions

16. Clams braised egg complete

Tips:

Don't pour out the water for cooking clams, put it warm and add it to the egg liquid!
The ratio of warm water to the egg liquid is 1:1. If you like thin ones, you can increase the amount of water appropriately!
