Claypot Partridge Rice

The partridge cleans up the fine hairs and cuts them into small pieces. Soak the shiitake mushrooms for an hour and cut into strips. Add a spoonful of light soy sauce, a spoonful of Fenjiu, half a spoonful of sugar, a little pepper, and a little sesame oil to the partridge, and mix well. Pour in the shiitake mushroom strips and mix again to allow the shiitake mushrooms to absorb the remaining seasoning juice. Marinate for half an hour.

When the rice is ready, put it in a casserole and add water to a boil over high heat. Change to a low medium heat and cook until the moisture is dry, then add the marinated ingredients.

Rotate the casserole from time to time to prevent burning, and do not open the lid halfway through.

Turn off the heat after about 8-10 minutes, add chopped green onion or coriander, and continue to simmer for 2 minutes.

Pick the rice and mix well and you can eat it.
