Cocoa Toast
1.
The first step is to prepare all the ingredients.
2.
All the ingredients except butter and salt are put into the bucket of the bread machine. (Liquid materials are put in first) The IMIX program is directly set once for the Bai Cui bread machine, and the kneading program can be set for 20 minutes for other bread machines.
3.
When the IMAX program is over, take out the dough and cut it into small pieces with scissors. At the same time, put the salt and the softened butter into the bread bucket, then put it back into the bread machine, and set up an IMIX program again. (Each IMAX program is 20 minutes)
4.
The film pulled out of the kneaded dough is strong and tough and not easy to break.
5.
Then simply gather it into a circle, put it in a basin, and cover it with plastic wrap for a fermentation.
6.
The dough is about twice as big and fermentation is complete.
7.
Take out the dough and let it air out. Divide it into 8 equal parts, round them separately, cover with plastic wrap and let it rest for 15-20 minutes.
8.
Take a dough with the mouth facing down, arrange it into a long oval shape, and roll it out.
9.
Then turn it over and roll it up from top to bottom.
10.
Roll the rest of the dough in the same way and let it rest for 5 minutes.
11.
Take a rolled dough and roll it gently again.
12.
Roll up from top to bottom, the rest is the same.
13.
Put 4 pieces into a water cube mold, and then put it in the oven for secondary fermentation. (Prepare a bowl of hot water in the oven)
14.
Take it out after fermentation until it's 80% full, and start to preheat the oven at 170 degrees and lower at 190 degrees.
15.
Then put the toast box into the preheated oven, and bake the middle and lower layers for about 40 minutes (the temperature and time are for reference only, each oven is different). After the baking is over, immediately take it out, shake the mold, and put it in Place it on a drying rack to hand temperature and seal it for storage.
Tips:
1. Different brands of flour have different water absorption, and the liquid is adjusted according to the state of the dough.
2. The brand and material of the toast box are different, and the baking time needs to be adjusted according to the usual baking situation of the toast.
3. The baking time and temperature should be adjusted appropriately according to the temper of your own oven. The temper of each oven is different and needs to be adjusted flexibly.
