Cold Mustard Dishes

The vermicelli is soaked in water and it takes about 2 hours.

Take a clean small bowl, pour in two tablespoons of mustard powder, pour in boiling water to make a paste.

Cover the small bowl of mustard paste tightly and simmer for 30 minutes.

Wash the spinach and rub the carrots into filaments.

Pour clear water into the pot, boil it until bubbling, and then fill the soft soaked vermicelli, blanch it until the color is translucent, and then remove it into a bowl of clear water.

Remove the washed spinach in blanching water, dry it and set aside.

Cut the vermicelli appropriately and put it in a large clean bowl with spinach and carrot shreds. Add a tablespoon of light soy sauce.

Sprinkle with a little salt.

Pour in two tablespoons of braised mustard paste according to your preference and mix well.

Add sesame oil and mix well. If you feel too spicy and choking your nose, add a little vinegar to neutralize the hotness of mustard.
Tips:
1. The mustard noodles are prepared with hot water above 70°C in a ratio of 1:1, but do not use boiling water, otherwise the mustard powder will be "scorched to death". Cover tightly and simmer for 30 minutes.
2. Mix mustard and flour with water in a ratio of 1:1, and wipe it on the soles of your feet before going to bed to cure wind, cold and excessive phlegm.
