Colourful Snowy Mooncakes

Ice skin ingredients: 60g glutinous rice flour, 45g sticky rice (rice) flour, 35g orange flour (wheat starch), 180ml milk, 45g sugar, 25g butter, 15g condensed milk, 5g matcha powder, chocolate sauce 5 grams, pumpkin, purple potato, pitaya peel, and 25 grams of steamed glutinous rice flour; filling materials: white lotus paste filling, duck egg yolk, satay beef filling (you can configure it according to your preference).

Weigh all the ingredients.

Duck egg yolk, purple sweet potato, pumpkin, and 25 grams of glutinous rice flour for making cake flour are steamed in a steamer. The cake flour needs to be steamed under water. I use a small steaming cup with a lid from a baby milk warmer.

Sift the cake powder evenly.

Peel off the outermost skin of the dragon fruit skin, chop it, add film and steam it in a microwave oven for 1 minute.

Sift in glutinous rice flour, sticky rice flour, and orange flour and mix into a smooth and even batter.

Leave the batter for 30 minutes to allow the various materials to fully absorb water. After 30 minutes, put the batter into the steamer and steam for 20 minutes. Stir it with chopsticks 3 times in the middle.

The white lotus paste filling and beef filling are arranged into the same size agent. My moon cake mold is 5 cm in diameter. One egg yolk is too big, so I divide it into two pieces.

Puff a small amount of cake powder in the middle of the mold (I bought a new baby puff which is very easy to use), fill the animal pattern or flower core pattern in the middle of the flower piece with your favorite colored dough, and put the flower piece back into the moon cake mold.
