1. 100g cream cheese fully softened

2. Add 30g of caster sugar and beat until smooth

3. The key to the deliciousness of cheese filling ~ kumquat sauce (can be replaced by any citrus jam, or not added)

4. Add two spoons of kumquat sauce, 1g salt, 10ml lemon juice, 2 drops of vanilla extract and continue to beat evenly

5. Get this cheese filling at room temperature and set aside

6. Start making cake rolls, spread grease paper on the baking tray, and do anti-sticking treatment

7. 10g butter melted, add 10g powdered sugar and mix well

8. Mix to the state as shown in the figure

9. Add 10g low powder, mix well

10. Add 10g cocoa powder and a little soda powder, mix well

11. Get the status as shown

12. Scoop it up with a small spoon or draw irregular patterns on the baking tray in any way, and put it in the refrigerator to freeze

13. Two egg yolks + 12g sugar, beat until the color becomes lighter

14. Add 16g vegetable oil in two parts and mix well

15. Add 16g milk and mix well

16. Sift in the baking powder low-powder mixture and mix well

17. Get the egg yolk paste as shown in the picture for use

18. Add 24g of sugar to two egg whites in portions, and beat until the wet foaming state as shown in the figure.

19. Mix the egg yolk paste obtained in 11 with a spatula and mix evenly

20. Take out the baking pan from the refrigerator, the pattern part has solidified, carefully pour the cake batter on top

21. Smooth, shake out the bubbles and put it into the middle layer of the oven that has been preheated 180 degrees, and fire up and down for about 10 minutes

22. While baking the cake, continue to finish the mousse. Soak 2.5g gelatin slices in 20ml water to soften it and heat it in a microwave oven for 500w for 30 minutes to melt into gelatine liquid.

23. Add the cheese filling you made before and mix well

24. Beat 100ml whipping cream to the state before wet foaming, pour into the cheese paste

25. Use a spatula to replicate evenly to a smooth state

26. Part of the cake base is baked, carefully demoulding while it is hot

27. Spread the cheese filling on the side without patterns, fill in the fruit as you like, roll it into a circle, wrap it in oil paper and put it in the refrigerator to solidify

1 It's OK to not make patterns



2 Kumquat sauce does not need to be added, but it is recommended to try it, the effect is very different in one simple step



3 It is better if there is black cocoa powder in the pattern part, if not, add a little soda and bake the color will be darker

4 Be careful not to overbake the cake base, as the color is light yellow.



5 Because of the pattern, the baking pan must be treated with anti-sticking treatment (oiled), because the pattern will be sticky
