Crispy Fish Cubes

Wash the grass carp fresh and set aside with green onion, ginger and star anise.

Cut the grass carp into cubes, drain the water, and fry in a pan with a little more oil. Don't rush the fish cubes.

When the fish is fried to golden brown on both sides, add green onion, ginger, star anise and fry for a while.

Cook some rice wine to remove the fishy, put light soy sauce, color the dark soy sauce, a little sugar, add a little boiled water and simmer.

Tips:
The fish has matured during the frying process, so only a little water is needed in the process of adding water and boiling! After frying, be sure to put the light soy sauce and dark soy sauce immediately. The high temperature in the pan is good for coloring.
