Crispy Fish Cubes

Clean the fat head fish and cut into 4~5 cm pieces.

Add appropriate amount of salt, starch, chicken essence, light soy sauce, sugar, and vinegar, and stir well.

Rouge for about 15 minutes.

Tips:
The sugar and vinegar are for removing fishy, so you can leave it alone. The saltiness can be adjusted according to personal taste.
