Crispy Peanut Candy

Raw dried peanuts are fried in a wok. I use ordinary peanuts. The red-skinned peanuts are more delicious;

Stir-fried peanuts are served and let cool. It doesn’t matter if the peanuts are a little burnt, they are just as fragrant; at this time, clean the wok of the peanuts that you have just fried, dry them on the fire and let them cool for later use;

When the peanuts are not hot, you can start to peel the peanuts. You can break the peanuts in half while you go, so that the peanuts in the peanut candy can be more evenly distributed;

Put rock sugar and white granulated sugar in the wok (it is practical to use one of the two, I originally wanted to use white granulated sugar, but I found it when I poured it into the pot, so I had to make up some more rock sugar);

When the rock sugar and white granulated sugar are fried to a half-melt state, you can add some honey. On the one hand, the taste will be better, and on the other hand, the color of the peanut candy will be better.

After all the sugar is fried, add the peanut kernels and stir together. Be sure to stir evenly so that the peanuts are covered with syrup;

Put the stirred hot peanut candy on the cutting board and use a rolling pin to roll it to a suitable thickness (note: there is no need to grease the cutting board, the sugar will not stick to the cutting board after a while);

The rolled peanut candy must be cut into pieces while it’s hot, because it’s easy to break when it’s cooled down; just cut it and put it on the plate, it’s fragrant, crispy and tastes good~~~
