Crispy Whitebait Lump Soup

Prepare all the ingredients. I don’t have all-purpose flour at home. I use golden arowana pastry flour with bread flour, and then prepare a fried whitebait dried shrimp.

Boil water in a pot, add a little salt and oil.

Mix the two flours together.

Then slowly add the water, and the water should be slowed down while adding and mixing.

Just mix it like the picture.

Then add a proper amount of pepper and fine salt to the fine pimple noodles to adjust the flavor.

Bring the soup to the boil, and slowly sprinkle the mixed noodles into the pot.

Then simmer on low heat until the pimple noodles are evenly cooked.

Then it can be served with our fried whitebait and shrimp skin. If you like it, you can add some red oil and other condiments.
