There are two ways to make skin jelly. The exquisite skin jelly is "steamed"; the ordinary skin jelly is "boiled". Almost all homes are made of "skin jelly". The so-called "crystal skin jelly" requires the soup to be clear. To achieve this, steaming is the best method, but steaming takes a long time, so it can be dealt with by boiling it with a low fire.

Crystal Jelly

1. Wash the skin, be sure to pluck out the remaining "hair"

2. Put cold water into the pot, boil and cook for 2 minutes, remove and let cool

3. Scrape the fat from the skin and rinse it off repeatedly

4. Cut it into strips

5. Then diced. Set aside

6. Put the pork skin into the soup pot, add water according to the ratio of 1:2

7. Cook for about 2 hours. Add a little salt to taste

8. Then, put it in a container and let it cool to solidify

9. Take out the undercut. Change the knife to cut

10. Serve and taste

Tips:

1. The ratio of skin and water is 1:2, for reference only;
2. If you want the soup to be clear, you must wash the fat from the skin, followed by a low heat. Best steamed;
3. It can be served with dipping sauce.
