Wheat starch, also known as orange powder.

Weigh 60 grams of wheat starch.

Add 2 times the amount of water.

Stir it into a slurry.

Take two flat base plates, mainly for replacement, one is fine.

Brush a thin layer of cooked oil on the plate.

Spoon in 1 scoop of powder paste and spread out.

Put the water in the pot to boil on high fire, keep the water boiling, and put the dish containing the slurry into the boiling water.

Close the lid, preferably with a glass lid, to observe the internal state. It is ready when the steamed noodles are bubbly (the time is very short, only one minute). Because of the water vapor obscuration, no big bubbles can be seen in the picture, and the bubble will retract when the lid is opened, so it is difficult to take a clear picture. You will know when you operate it yourself.

Take out the steamed noodles, put the plate in cold water and ice for a while. You can use another plate to steam the next one while icing this one.

Very thin and translucent. If the paste is spread thick, the steamed dough will be thick.

Spread the Liangpi on the chopping board, and brush the surface with a layer of cooked oil or sesame oil to prevent adhesion.

Only four sheets of 60 grams of wheat starch were made, but I did not dare to make more in the first attempt.

If it still sticks, you can wash it with cold water, so that it won’t stick and it’s more resilient. If you cast wash, use cold water.

Sauce: 1 tablespoon of sesame paste (a small spoon for eating, not large). I have kept this sesame paste for a little longer, and a little sesame oil has ooze out.

2 tablespoons of seafood soy sauce, 2 tablespoons of vinegar, half a tablespoon of sugar, and some salt.

Stir well and taste the taste, it depends on personal preference. I adjusted this to be sour and salty with a little sweetness.
